When I worked in wine production during harvest 2022, I was obsessed with puncheons. Twice as large as a standard barrel, the puncheon provides more surface area of the barrel sides to the liquid fermenting inside. More flavor, high acidity and more pH control comes from puncheons.
Like a great story, using the correct vessel to craft the liquid inside, and vehicle to tell the story is critical. I believe smaller wineries, breweries, cideries and spirits producers have amazing stories to tell. Let me help you get those stories to the ears that need to hear them..
